RASMALAI

Ras Malai  is a sweet dessert originating in India.The name Ras Malai comes from two parts in Hindi: "Ras" meaning "juice/juicy" and "Malai", meaning "cream".Ras Malai consists-balls (or flattened balls) of paneer(Indian cottage cheese) soaked in malai (creamy milk sauce) flavoured with cardamom,rose water and saffron.





INGREDIENTS:-

Milk-4 cups(for paneer)
Lemon Juice-2 tbsp
Sugar-1 cup
Water-4 cups
Milk-4 cups
Cardamom powder-1/4 tsp
Saffron-few stands
Rose water-1/8 tsp
Sugar-1/4 cup or to taste
Chopped Pistachios for garnishing





METHOD:-

1-Pour the milk into heavy bottomed pan and bring it boil on medium flame.Stir continuously to avoid the burning of the milk at the bottom.
2-When the milk comes to boil,lower the flame and slowly add the lemon juice into the milk.Stir gently.When the milk starting curdling,turn off the flame.
 3-Drain the cheese from the whey using the cheese cloth(muslin cloth).Rinse the cheese that is collected into the cloth using the cold water,to take out the taste of lemon from the cheese.
4-Now squeeze out all the water from the cheese and press it under any heavy weight to remove any remaining water from the cheese at least for 1 hour.
5-Then take out all the cheese on the plate.Knead it at least for 10- to 15 minutes to make a soft dough.Divide the cheese dough into equal portion.Roll into smooth round balls and flatten slightly
6-In a Pressure cooker add the sugar and water.Boil it on a low flame till the sugar dissolves.Now put the small balls in it.
7-Close the lid and when the pressure build,put the weight on and let it cook for 1 whistle.Then simmer it for 5 more minutes in a very low flame.Switch off the stove.
8-In another pan take 4 cups of milk and boil over low heat by stirring it continuously until the milk reduce to about 2 cups.
9- Grind saffron with a small amount of sugar and add it to the milk while boiling.Then add rose water.
10-When the milk should have reduced to half,then add remaining sugar and cardamom powder.
11-Then take out boiled paneer with the spoon and let the water drain by pressing little.Then add paneer in milk and cook it for 5 minutes.
12-Garnish with chopped almonds and pistachios.Refrigerate it and serve chilled.
