ALOO PARATHA

Aloo Paratha  is an Indian recipe and one of the most popular breakfast dishes throughout western, central and northern regions of India. Aloo (potato) stuffed Parathas are basically unleavened dough stuffed with a spiced mixture of mashed potato, which is rolled out and cooked on a hot tawa with butter or ghee. Usually butter or chutney is served with Aloo Paratha and in rural parts of northern and western India, lassi is served along with it.



INGREDIENTS:-

Wheat flour-2 cups
Boiled Potatoes-2(peeled and mashed)
Chopped Green chili-2
Roasted cumin powder-1/2 tsp
Coriander powder-1/4 tsp
Chili powder-1/4 tsp
Dry mango powder-a pinch
Salt to taste
Ghee/butter/oil for frying
Water to knead dough

METHOD:-

1-Knead the wheat flour with a pinch of salt and water,make into a soft dough.Cover it and keep aside.
2-Prepare stuffing by combining mashed potato,chopped green chili,salt,coriander,cumin,chili and mango powder,mix well.
3-Make equal portion small size ball of potato mixture and lemon sized ball of dough.


4-Roll to form a poorie(circle),place potato stuffing ball and take the edges of the dough and cover the stuffing.Prepare with rest of dough.


5-Roll in dry wheat flour and roll out into parathas.


6-Heat a tawa,place a paratha and let it cook,after few secs when the paratha puff in different places flip the paratha and let it cook for a few more secs.
7-Once light brown spots appear,drizzle some oil/ghee/butter and roast to a golden shade on both sides.Use a spatula to press the puffed areas as the paratha gets roasted.
8-Serve hot with Yogurt,tomato ketchup,Pickle or tamarind chutney.
