I remember when I was a child, every Sunday my father would rush to the ‘known and trusted’ mutton shop to grab the best of the muttons(khasi mansa)available.People in Orissa are very choosy when it comes to picking up mutton/Mansha.So let’s try to cook some Mom style typical Oriya Mansha Tarakari(MuttonCurry) with soft mansa (mutton) pieces and aaloo (potato).

Chopped onion-1 large
Potato-5 small, chopped into halves
Chopped tomato-1 large
Ginger-garlic paste-4 tsp
Turmeric powder-1/2 tsp
Chili powder-4 tsp(as per your taste)
Shan Garam masala-1 tsp
Coriander powder-2 tsp
Shan Mutton curry powder-1 tsp
Cinnamon stick-1 small
Cardamom pod-2
Black pepper-5
Cumin seeds-1 tsp
Bay leaves-2
Salt 2 taste

Mutton-1 kg
Ginger-garlic paste-2 tsp
Turmeric powder-1/2 tsp
Chili powder-2 tsp
Garam masala-1 tsp
Coriander powder-1 tsp
Mutton masala curry-1 tsp
Yogurt-3 tbsp
Lemon juice-1 tbsp
Salt 2 taste

1-Marinade the Mutton with the marinade ingredients. Keep aside for approx. 1 hours.
2-In a pan heat 1 tbsp oil,add potatoes and 2 pinch salt and fry till golden brown.
3-In a pressure cooker heat oil,add cloves, cinnamon stick, cardamom pod,bay leaves and cumin seeds, let the spices sizzle to flavor the oil.
4-Then add chopped onions and Saute the onions til they turns to light brown.Add ginger-garlic paste and Saute till raw flavor disappears.
5-Add salt,turmeric powder,coriander powder,chili powder,garam masala and mutton curry powder.Fry till raw flavor disappears.
6-Add marinated mutton and mix well.Let it sit for 2-3 mins before stirring again. This is the most intensive part of this dish.
7-The Mutton slowly starts absorbing the rich flavors of the spices and changes color as it is being cooked.
8-As the oil separates, add 2-3 cups Water and mix well.Put the lid on the Pressure cooker and cook till it is about to give the 2-3 whistle.(depends on ur mutton)
9-Let the lid open by itself.Again heat the dish, add fried Potatoes and chopped tomatoes.Mix it with the Mutton and cook till potatoes and tomatoes are done.
10-Remove from heat, now your mutton curry is ready.Serve hot with rice or roti.
