CHINI-KHIRA PODA PITHA(SUGAR & MILK CAKE)

 This is a famous,delicious and lip smacking Pitha made in Odisha.Poda means burnt and Pitha is one type of cake.Mostly made during the festival called Rajo which is celebrated for girls.So let's start....



INGREDIENTS:-

FOR DOUGH:

Rice-2 cup
Milk-4 cups
Sugar-2 tbsp(as per taste)
Ghee-4 tbsp
Sliced coconut-2 tbsp
Cashew nuts-2 tbsp
Raisins-2 tbsp
Cardamom powder-1/4 tsp
Black pepper powder-1/4 tsp
Salt to taste

FOR COCONUT STUFFING:

Grated coconut-1&1/2 cups
Sugar-4 tbsp(as per ur taste)
Cardamom powder-1/4 tsp

METHOD:-

1-Soak the rice for 1 hours,then wash and drain all the water completely and then spread the raw rice in a soft towel and allow it to dry completely.
2-Then heat a pan and dry roast the dried rice(this is to ensure that the moisture is completely gone).Grind it to a fine powder in a mixer and keep it aside.
3-In a pan heat 1 tbsp ghee,fry sliced coconut,cashew nuts and raisins till the nuts turns little golden brown.Remove from pan and keep aside.
4-Then in the same pan add grated coconut,sugar and cardamom powder.Roast it for 8-10 minutes then remove from heat and keep aside.
5-In a kadhai bring the milk to boil.Add fried dry fruits and coconut,sugar,salt,cardamom and pepper powder.
6-Add the rice flour in small batches and mix continuously so that no lumps are formed.
7-Keep on stirring in low-medium heat for approx.25-20 minutes to make fine dough.Then remove it from heat,let cool down for 5-6 minutes.
8-Pre-heat the oven to 350 F. Meanwhile line a baking pan with Aluminum Foil grease a little ghee on the foil and add a layer of half of the dough.
9-Spread a layer of the coconut stuffing over it then cover with another layer of remaining half dough.Again grease the top surface of the dough with remaining ghee.
10-Bake in a preheated oven of 300 degree F for 40 to 45 minutes till the top turns to light brown.Insert a toothpick,it's done when the toothpick comes out clean.
11-Remove from the oven and allow to cool down.Once cooled removed to a plate,Cut into different shapes you desire and serve with dalma or ghuguni.
[If you don't have oven then take a pan and grease it with 1 tbsp of ghee.Add a layer of half of the dough.Spread a layer of the coconut stuffing over it,
then cover another layer of remaining half of the dough.Grease the top surface of the dough.Heat the pan and lid it with a cover for 3-4 minutes.Then keep it in low-medium heat for appox. 35-40 minutes till the cake turning golden brown from each side.Insert a toothpick,it's done when the toothpick comes out clean.
Then remove from the heat and allow it to cool.]
