Kutchi Dabeli is a snack food of India,originating in the Kutch or Kachchh region of Gujarat.It is a spicy snack made by mixing boiled potatoes with a Dabeli Masala and putting the mixture between Pav (burger bun)and served with chutneys made from tamarind,date,garlic,red chillies,etc. and garnished with pomegranate and roasted peanuts.Dabeli today is famous not only in Kutch and Gujarat but also throughout Maharashtra,parts of Andhra Pradesh,Rajasthan and many other States of India.Dabeli Stalls can be found in metropolitan cities like Ahmedabad,Mumbai,Nasik,Bangalore,Pune,Delhi,Nagpur,Nizamabad,Raipur, Bilaspur,Jabalpur,Indore,Bhopal,Udaipur,Jaipur,Aurangabad etc. besides all major cities,towns nd tourist spots of Gujarat.
INGREDIENTS FOR DABELI MASALA:
Coriander seeds-2 tbsp
Cumin seeds-1 tbs
Dry red chili-4
PREPARATION FOR DABELI MASALA:
1-Roast all the ingredients in a pan for 2 to 3 minutes.
2-Grind to a fine powder in a blender.Use as required
INGREDIENTS FOR MASALA PEANUTS:-
Red chili powder-1/2 tsp
Salt to taste
PREPARATION FOR MASALA PEANUT:-
1-Heat a pan on medium heat.Dry roast the peanuts till it is light brown and get nice fragrant.Remove it in a plate and let it cool down.
2-Remove the skin of peanuts and break into halves.
3-In a pan heat oil on medium flame.Once oil is hot add asafetida,peanuts,salt and red chili powder and mix well.Cook it for a minute.
4-Remove from pan and keep them aside to cool down completely.
INGREDIENTS FOR DATE & TAMARIND CHUTNEY:-
Deseeded dates-1 cup
Tamarind paste-2-3 tbsp
Grated jaggery-1/4 cup
Chili powder-1/2 tsp
Cumin powder-1/2 tsp
Salt to taste
PREPARATION FOR DATE & TAMARIND CHUTNEY:-
1-Mix all the ingredients in a saucepan and boil them on medium heat.
2-When water come to a boil,lower the heat and simmer it for 20 minutes.
3-Turn off the heat and let it cool.Puree the mixture in a blender.(You need to strain the mixture if using whole deseeded tamarind)
4-Let it cool completely before storing in an air tight container.Refrigerate and use as required.
INGREDIENTS FOR CHILI & GARLIC CHUTNEY:-
Garlic cloves-8-10 peeled
Dry red chili-4-5
Lemon juice-2 tbsp
Salt to taste
PREPARATION FOR CHILI & GARLIC CHUTNEY:-
1-Soak the red chilies in warm water for 30-40 mins.In a wet grinder add the soaked red chilies,garlic,lemon juice and salt to taste.
2-Grind to a smooth paste add water if required while grinding.Keep this red garlic chutney aside.
INGREDIENTS FOR POTATO FILLING:-
Boiled & mashed potatoes-2 large
Dabeli masala-1 1/2 tbsp
Dates & tamarind chutney-2 tbsp
Salt to taste
PREPARATION FOR POTATO FILLING:-
1-Boil the potatoes in a pressure cooker or microwave oven. peel and mash them and keep aside.
2-Combine the dabeli masala,date tamarind chutney and a little water in a bowl and mix well.
3-Heat the oil in a pan,add the prepared dabeli masala mixture,mix well and cook on a medium flame for 1 minute,while stirring continuously.
4-Add the mashed potatoes,salt and a little water,mix well and cook on a medium flame for another 2 to 3 minutes,while stirring continuously.
5-Remove from the flame,transfer it to a bowl and press well with the back of a spoon.
6-Sprinkle the grated coconut,chopped onion,chopped cilantro,masala peanuts,sev and pomegranate on top.Keep aside.
INGREDIENTS FOR ASSEMBLE DABELI:-
Pav or Buns
Chili garlic chutney
Dated tamarind chutney
Finely chopped onion
Finely chopped cilantro
PREPARATION FOR ASSEMBLE DABELI:-
1-Heat some butter in a pan.Roast the pav/buns nicely from both the sides.
2-Slice the burger buns into halves horizontally.(in such a manner that it is open from 2 sides only)
3-Apply the sweet chutney on one slice of the bun and the red garlic chutney on the other side.
4-Place a portion of the filling in the center of bun.Top with the chopped onion,chopped coriander,masala peanuts,sev and pomegranate.And press dabeli gently.
5-In the same way make all the dabeli pav and serve immediately by topping with some masala peanuts and pomegranate seeds.
