AMERICAN CHICKEN ROLL

Traditional New England restaurants serve lobster rolls (made with butter, not mayonnaise) with potato chips or french fries on the side.In this recipe I used baked chicken Instead of lobster meat.A traditional MAINE's(USA) famous lobster roll is a sandwich filled with lobster meat soaked in butter and served on a steamed hot dog bun or similar roll,so that the opening is on the top rather than on the side.There are variations of this sandwich made in other parts of New England,which may contain diced celery or scallion,and mayonnaise.The sandwich may also contain lettuce,lemon juice,salt and black pepper,believe me it taste more.....................




INGREDIENTS:-

FOR CHICKEN:

Chicken breast-500 gms(cut into small cubes)
Chili flakes-1 tsp
Olive oil-2 tsp
Crushed black pepper-1/4 tsp
Salt-1/4 tsp

FOR ROLL:

Mayonnaise-1/2 cup
Lemon juice-1 tbsp
Finely chopped fresh parsley-1 tbsp
Finely chopped celery-1 stalk(1/2 cup)
Bratwurst or hoagie buns-4
Crushed black pepper-1/4 tsp
Butter-2 tbsp
Salt to taste

METHOD:-

1-Preheat grill until it reaches 350°F.Brush chicken with olive oil and season with salt,pepper,chili flakes and garlic powder.
2-Place chicken on a greased cake tin or an aluminium foil pan and cook for 8-10 min per side or until juices run clear and chicken in so longer pink.
3-Remove from grill,allow to cool for 5-10 min.In a bowl,combine the grilled chicken,mayonnaise,lemon juice,celery,parsley,salt and pepper to taste.
4-Place this chicken mixture in refrigerator for 5 to 10 minutes.This allows the salad to absorb the flavorings.
5-Heat a large skillet over medium heat.Spread flat sides of buns with butter.Cook until golden,about 2 minutes per side.or Place the buns in the pan
butter-side down and toast until golden brown,about 1 to 1 1/2 minutes.Flip and toast the second side until golden brown, about 1 to 1 1/2 minutes.
6-Divide the chicken mixture between the buns and serve immediately...
(Instead of bake you can also cook chicken,but don't bake or cook too much)
