Aloo chop is famous street food in Orissa and West Bengal.It literally means potato fritters.It consists of a potato mash patty coated with chick pea flour,then deep-fried and served hot with fried green chilies and various types of chutney or sauce or ghuguni.
Gram flour(besan)-1 cup
Turmeric powder-1/2 tsp
Red chili powder-1/2 tsp
Cumin seeds(jeera)-1/4 tsp
Carrom seeds(ajwain)-1/4 tsp
Baking soda-1 pinch
Hot oil-2 tsp
Salt to taste
Boiled Potatoes-4 large (peel and mashed)
Chopped onion-1 medium
Grated Ginger-2 tsp
Garlic cloves-2 tsp
Crushed Green chili-1 tbsp
Panch phutan(Fenugreek seeds,Nigella seeds, Cumin seeds,Black mustard seeds & Fennel seeds)-1 tsp
Cumin powder-1/4 tsp
Red chili powder-1/4 tsp
Coriander powder-1/4 tsp
Turmeric powder-1/4 tsp
Chopped coriander leaves-1 tbsp
Lemon juice-1 tbsp
Water as needed
salt to taste
Oil for deep frying
1-In a pan heat 1 tbsp oil,panch phutan,curry leaves and asafetida,when they start to splutter,add chopped onion.
2-Fry till their colour changes,then add green chili,ginger,garlic and fry until the raw smell goes off.
3-Then add salt,turmeric powder,cumin powder,coriander powder,coriander leaves,lemon juice and the mashed boiled potato.
4-Mix properly on low flame,fry for 2-3 minutes and keep aside to cool down.
5-Divide into equal parts and make small lemon sized balls from the potato mixture and keep aside.
6-In a bowl take gram flour,cumin and carom seeds,turmeric powder,chili powder,baking soda,water and salt.Make a thick batter,Add a 2 tsp of hot oil to the batter(it will make chops crispy).
7-Heat oil for deep frying,Dip each ball in the batter and deep fry until it become golden brown.
8-Serve hot with ketchup or tamarind chutney or yellow peas curry(ghuguni).
