KALAKAND

Kalakand also known as sandesh is a popular Indian sweets made out of solidified, sweetened milk and cottage cheese. It was invented in 1947 by Baba Thakur Das in Alwar, Rajsthan, India. It is made in India during festivals and celebrations. such as Holi, Diwali, Janmashtami, Navarathri and Eid  A huge pan is kept on a flame and large amount of milk is boiled stirring it continuously till it is thickened with sugar and dry fruits.







INGREDIENTS:-

Ricotta Cheese-30 oz tub/850 gms(you can also use paneer/Indian cottage cheese)
Sweetened Condensed Milk-14 oz can/400 gms
Chopped Almond-2 tbsp
Chopped Pistachio-2 tbsp
Cardamom powder-1/2 tsp
Rose water-1/4 tsp
Ghee for greasing









METHOD:-

1-Grease a rectangular dish with ghee and keep aside.
2-In a non-stick pan add ricotta cheese and condensed milk,mix well and heat over medium heat.
3-Keep stirring about 30-35 minutes until the mixture thickens.
4-Once the mixture starts to get thick,add rose water and cardamom powder.Keep stirring until it starts to leave the sides of pan.
5-Transfer the mixture to the greased pan and spread it evenly with a spatula.
6-Sprinkle the chopped nuts over the top and slightly press it with a spatula
7-While the mixture is still hot,make cuts with a knife to form squares.Let it cool,then Keep it refrigerated for 1 hour.
8-Now kalakand is ready,Cut into square pieces and serve chilled.

MICROWAVE METHOD:-

This can be made in the microwave instead of stove. Microwave recipe method is-
1-In a microwave safe large bowl add ricotta Cheese and Condensed Milk,Stir with a whisk so that ricotta cheese lumps are dissolved.
2-Microwave it for 4 minutes, uncovered.Take out and whisk well,Repeat this process for 2 more times.(After every 2 minutes,stir with a spoon.)
3-Again Microwave for 2 mins covered.Take out and mix.repeat 3 times.Microwave again uncovered for 4 minutes.
4-I microwaved this total for 18 minutes,Now it should be semi solid.Add cardamon powder and rose water.Mix properly.
5-Pour this mixture into rectangle dish or a plate,flatten the mixture,Garnish with chopped nuts over it.Allow to cool and cut into desired pieces and serve.
