RAJ KACHORI CHAAT

INGREDIENTS:-

FOR DOUGH:

All purpose flour(Maida)-1 cup
Water-1/3 cup(warm)
Oil-1 tbsp
Salt-1/2 tsp
Oil for deep frying

FOR  FILLING:

Moong Sprouts: 1/2 Cup (Boil them in a open pan for 5 minutes)
Boiled potato-1 cup(cut into small pieces)
Tamarind chutney-2 tbsp
Coriander mint(green) chutney-2 tbsp
Whipped Yogurt-1/2 cup
Chopped Onion-1/2 cup
Chopped Green chili-2 tsp
Coriander Leaves-1 tbsp
Black salt-1/2 tsp
Chaat masala-1/2 tsp
Thin Sev-4 tbsp
Papdi-2

METHOD:-

1-In a bowl mix flour,salt with warm water and make it into a hard dough.
2-Apply 1 tbsp of oil on the top of dough and cover,let it rest for about an hour.
3-Then,mix the dough again very well with hand and make it smooth/soft.
4-After an hour roll them into small pooris of 4 inches diameter.
5-And deep fry them in hot oil on medium flame till the kachoris are crisp and golden brown from both sides.
6-Drain on a paper towel and let it cool a bit.
7-Take one kachori in a plate and make big hole in the center
and fill it with boiled potato,sprouted moong,crumbled papdi.
8-Then sprinkle yogurt,tamarind chutney,green chutney,chopped onions,chopped green chilli,
coriander leaves,sev,black salt,chat masala and serve immediately.
